How the process works
- 01Register your interest. Share an outline of your concept, experience and ambitions.
- 02Informal conversation. Shortlisted applicants will be invited to talk through their idea and ask questions.
- 03Concept review. Where appropriate, this may include a tasting, product review or short presentation.
- 04Space and terms. We will explore the most suitable opportunity, requirements and next steps with selected applicants.
- 05Onboarding and launch support. Successful traders will join the market community and prepare for the planned summer 2027 opening.

You do not need to have every detail sorted. Tell us what you want to offer, who it is for, what makes it worth choosing and what kind of space or support would help. If you are unsure whether your idea fits, register anyway - we would rather start a conversation than miss a good business.
